Vegan Breakfast

Breakfast is the most important meal of the day for you? Then we recommend a vegan egg dish. Try whether this alternative with tofu is the yellow of the egg for you.

Ingredients for 4 people:

  • 300 g tofu, natural (for example from Rotenturm in southern Burgenland)
  • 40 g oil
  • 100 g onion
  • 100 g smoked tofu (for example from Rotenturm in southern Burgenland)
  • 10 ml soy sauce Kala Namak
  • Salt pepper, turmeric,
  • fresh herbs to taste: e.g. fresh cress, chives or parsley 

Preparation:

Roughly mash natural tofu with a fork to create a scrambled egg-like texture. Cut smoked tofu into small cubes. Heat oil in a pan and fry the smoked tofu cubes until crispy. Add the sliced onions and fry until translucent. Deglaze with soy sauce. Add the natural tofu and continue to fry. Season well with salt and pepper and add turmeric to determine the color. Season to taste. Serve the finished dish sprinkled with fresh herbs.

Vegan tip

KALA NAMAK or also called black salt is often used in vegan cuisine because it gives the typical taste of eggs to the dishes.
