Avocado tomato tartar with smoked tofu

Ingredients for 4 servings

  • 2 pieces avocados
  • 8 medium tomatoes
  • 60 g onions
  • Salt
  • Pepper
  • Lemon
  • Some fresh coriander
  • Some fresh mint
  • 1 piece of tofu (approx. 250g), smoked
  • Lettuce and flowers for garnish

Preparation

Pit avocados and cut into small cubes. Mix carefully with salt, pepper and lemon juice. Blanch tomatoes in boiling water for about 1 minute and then immediately cool in cold water. Then peel, core and cut into small cubes. Mix with the chopped onion. Season with salt and pepper and mix with some fresh coriander and mint. Dice the smoked tofu as well. Place a ring mold on the plate and fill the tofu, avocado and tomato cubes in layers in the ring mold.
Garnish with lettuce and flowers.
